Maple-Glazed Nuts with Lavender & Cayenne

Bake up a heart-healthy batch of crunchy nuts wrapped in maple and lavender deliciousness. This vegan-friendly, protein-rich snack is a sweet and spicy treat for lunchboxes, and for adding some zing to your trail mix.

INGREDIENTS:

MAKES 2 CUPS

  • 6 tablespoons pure maple syrup
  • 2 teaspoons dried culinary lavender buds
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon kosher salt (optional)
  • 2 cups unsalted or salted cashews, pecans, or mixed nuts
DIRECTIONS:
  • Position a rack in the centre of the oven and preheat to 350 degrees F. Line a large baking sheet with parchment paper.
  • In a small bowl, whisk together the maple syrup, lavender, cayenne, and salt. Add the nuts and stir gently to coat evenly.
  • Transfer the coated nuts to the prepared baking sheet. With a rubber spatula, spread the nuts in a single layer and then scrape any remaining glaze from the bowl over the nuts.
  • Bake for 10 to 12 minutes. The glaze should be browned but not burnt. If the tops of the nuts are sticky to the touch, return the pan to the oven and check for doneness again after 1 minute.
  • Remove from the oven and carefully slide the parchment with the nuts onto a wire rack. Let cool.
  • Once the caramelized coating has cooled and hardened, break apart the nut clusters and store in an airtight container.
