Lavender Strawberry Jam Christmas Cookies


Ingredients
  • 100g Icing sugar
  • 300g All purpose flour
  • Pinch of salt
  • 250g Unsalted butter
  • 1 Egg (room temperature)
  • 1 Tbsp Pure Vanilla extract
  • 1 Tbsp Rum extract
  • Terre Bleu Lavender Strawberry Jam

Directions

  • Mix all ingredients (except jam) together and knead well
  • Wrap dough in and put in fridge for 1hr to chill dough for easier shaping later.
  • Preheat your oven to 350 °F
  • Flour your workspace and rolling pin, and roll out dough to be approximately 1/2 cm thick (if you prefer a thinner cookie, roll to your desired thickness but be aware that thinner dough will be trickier to maintain its shape) 
  • Use a cookie cutter to cut out circular shapes in your dough sheet (tip: if you do not have a circular cutter you can use a glass). Use a snowflake cookie cutter to cut out a snowflake from the centre of half of the circle shaped cookies
  • Bake at 350 °F  9-12mins or until just slightly golden brown. Baking time will vary depending on your oven and cookie thickness
  • Remove from oven when done and let cookies cool on rack completely
  • Once cool, stack a snowflake cookie on top or a circular cookie, and place Terre Bleu Lavender Strawberry Jam in the cutout to your desired amount.
  • To finish, lightly sprinkle icing sugar. If you'd like to enhance the lavender flavour, garnish with culinary lavender bud.

Notes: Single batch yields roughly 16 cookies. If doubling recipe do not double the egg.
