Lavender Butter Tarts

Makes 12 tarts

A Terre Bleu tradition, mixing a Canadian favourite with our organic lavender! Nothing beats a butter tart with a flaky crust that melts in your mouth, a buttery sweet filling, and with our special hint of lavender. These treats are perfect for any occasion, whether it be celebrating Canada day or to enjoy as the weather cools down.

Ingredients

  • 1 tablespoon of Terre Bleu Culinary Lavender Bud for garnish
  • 1/2 cup Terre Bleu Lavender Maple Syrup
  • 3/4 cups packed brown sugar
  • 1/3 cup butter melted
  • 2 eggs
  • 1 tablespoon cider vinegar
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecan halves (optional)
  • 1/2 recipe of tart pastry (or use your favourite pastry recipe or premade frozen tart shells)

Directions

  1. Use your favourite pastry recipe or pre-made frozen tart shells. Roll out pastry to 1/8 inch thickness. Cut out into 4 inch circles. Place dough circles into muffin cups. Re-roll any pastry scraps until all muffin tins are filled. Place dough in refrigerator for 30 minutes
  2. Preheat oven to 350⁰F
  3. In bowl, combine 3/4 cups packed brown sugar, 1/2 cup Terre Bleu Lavender Maple Syrup, 1/3 cup melted butter, 2 eggs, 1 tbsp cider vinegar and 1/2 tsp salt. Whisk until combined.
  4. After dough has been thoroughly chilled, remove from refrigerator. Divide 1/2 cup of pecans in empty tart shells.
  5. Carefully spoon butter tart mixture into tart shells (approximately ¼ cup each). Be careful to not overfill tart shells otherwise they will overflow while baking
  6. Bake in oven for 20-25 minutes or until filling is set and pastry is golden brown.
  7. Let cool in muffin tin for 20 minutes. Carefully remove tarts and allow to fully cool on wire cooling rack.
