Lavender Ice Cream Floats


For the Lavender Simple Syrup:

For the Floats:


To Make the Simple Syrup:

  1. Bring water, sugar and lavender buds to a boil in a small saucepan. Allow to boil for 2 minutes. Remove from heat. 
  2. Strain syrup into a jar. 
  3. Chill in the refrigerator until ready to use. 

To Make the Floats:

  1. Scoop ice cream into stemless glasses. Approximately 4 scoops. 
  2. Pour 2 tablespoons each of the simple syrup and lemon juice over the ice cream.
  3. Fill the rest of the glass with sparkling water. 
  4. Garnish with lavender sprigs and lemon.
  5. Serve and enjoy immediately!
